Local Restaurants Make Deal with Diners: Predictable Affordability

Fixed-cost menus at Blue Sea Grill and Ruth's Chris Steak House aim to offer the usual quality -- at unusual prices |
As the struggling economy and upcoming holiday season have diners tightening their purse strings, five Baltimore-area restaurants are making their guests an offer: the same high-quality food, at economically friendly prices.
Emphasizing "predictable affordability," downtown Baltimore's Blue Sea Grill and four locations of Ruth's Chris Steak House in Baltimore City (Water Street and Pier 5), Annapolis, and Pikesville are offering fixed cost menus. The menus offer a set list of items, comprising a multi-course meal with a set price --$29.95 at Blue Sea Grill, $35.95 at Ruth's Chris Steak House.
"A few months ago, just the filet at Ruth's Chris Steak House would have been $35," said David Sadeghi, COO of Big Steaks Management, the restaurant group that operates Blue Sea Grill and nine franchised locations of Ruth's Chris Steak House across Maryland, New Jersey and North Carolina. "We want to make sure our regular diners and new customers can still go out and enjoy a great and affordable meal, especially during this sluggish economy and holiday season."
The new "Winter" menu at Blue Sea Grill is available every evening during the restaurant's normal operating hours (Mon.-Thurs, 5-10pm, Fri. and Sat., 5-11pm). The Ruth's Chris Steak House "Economy Proof" menu, originally introduced in late 2007 with select day/time availability, is now available nightly, seven days a week.
According to Sadeghi, offering the fixed cost menu on a broad, daily basis will have an impact on profit margins, but Big Steaks felt the availability was necessary given the economy, the timing, and the organization's commitment to serving its guests.
"We wanted the new fixed cost menus to feature many of our favorite items and plenty of choices, so our guests' dining experiences can be both memorable and affordable," he said.
Here's a look at the menus being offered at each restaurant:
BLUE SEA GRILL
$29.95 Winter Menu -- Guests select a choice of lobster bisque or chopped salad. Entree options include fisherman seafood stew, shrimp fra diavolo over linguini, the whole fish of the day, mahi fillet, or Blue Sea Grill shepherd's pie, all followed by apple pie for dessert.
RUTH'S CHRIS STEAK HOUSE
$35.95 Economy Proof Menu -- Guests select a choice of soup or salad, entree and accompaniment. Soup choices include lobster bisque, Louisiana seafood gumbo, or onion soup au gratin, salad choices comprise steak house or Caesar salad. Entree options are petite filet, stuffed chicken breast, salmon filet, mahi mahi, or mixed grill of tenderloin, stuffed chicken breast, crab cake and broiled tomato. Accompaniment selections include sauteed mushrooms, creamed spinach, mashed potatoes, or steak fries.
