Chefs Sarah Stegner and George Bumbaris left the Ritz-Carlton Chicago in July to pursue their dream.
They found it next to a nondescript office building in Northbrook on a road populated mostly by office parks.
In the next few weeks, their new restaurant, Prairie Grass Cafe, will open at 601 Skokie Blvd. in a lofty space that once was a seafood restaurant.
It will be far removed from the fine dining world with which they have long been associated, Stegner as chef for 13 years at the acclaimed Dining Room at the Ritz-Carlton and Bumbaris as the hotel's executive chef for 11 years.
In that world, diners clinked crystal and china, thumbed through an 800-bottle wine list and dropped an average of $100 a person to savor Stegner's award-winning French cuisine.
In this venture, the food will be solid, unfussy fare -- burgers, seasonal vegetables, an "untraditional shepherd's pie with really good braised beef, Swiss chard, root vegetables," Stegner said. Except for some top cuts of meat, entrees won't exceed $20.
