Michigan Grand Traverse Pie Co looking to franchise |

Grand Traverse Pie Co. is trying to grab a piece of the fast-casual restaurant market by franchising its version of the bakery cafe in Metro Detroit.
"We used to just make fruit pies, and then we added cream pies, quiches and sandwiches," said Mike Busley, who co-founded the company in 1996 with his wife Denise.
"Now we are a bakery cafe that offers morning food, lunch, and take-out at night. We've grown the concept to the point we feel it can compete in the market."
The fast-casual segment of the food industry is expected to grow 15 percent to 20 percent annually over the next few years, according to a Smith Barney report on restaurant trends. This segment, dominated by Panera Bread with 20 percent of the fast-casual market, includes Boston Market, Baja Fresh and Fazoli's.
"Why do people go to Panera? It's because it's an enjoyable, comfortable place to go for lunch," said Busley, who has formed GTP Franchising to market the concept. "That's what we are trying to be."
